Strawberry Cake

Ingredients — Cake

1 white cake mix

1 sm. Strawberry jello

¾ -1 cup Crisco

½ cup milk

4 egg yolks

1 cup strawberries (frozen)

4 egg whites

Recipe says you can add 1 cup coconut and 1 cup nuts- I never add these items to the batter


Add all ingredients to cake mix except the 4 egg whites. Mix all ingredients. Beat the egg whites and fold into the mixture. Pour into oblong pan which has been properly prepared by spraying with Baker’s Joy or greasing and sprinkling with flour. Bake at 350 degrees until done.

Ingredients– icing

1 stick unsalted butter- melted

1 box powdered sugar

½ cup strawberries

½ cup pecans (optional)

½ cup coconut (optional)


Beat together and pour over cake while hot.


This is a VERY old recipe so I try to buy the ingredients which were available in the 60’s. I buy the frozen sweetened strawberries because that is what I remember my mother using. I have never tried to make this with fresh strawberries. Because the frozen sweetened strawberries have so much juice, I think I always add more powdered sugar to thicken up the icing. I never use coconut because Jeff doesn’t like it and many times do not use nuts because Jeffrey hates nuts and this is his favorite cake.
